Gobhi Paratha (Cauliflower Stuffed Flatbread)
Ingredients
For the Cauliflower Filling:
Cauliflower: 1 medium head (florets separated)
Hot Water: For blanching/cleaning
Fresh Coriander Leaves: A handful, chopped
Ginger: ~1-inch piece, peeled and finely chopped
Fresh Red Chilies: 2-3, finely chopped
Nigella Seeds (Kalonji): ~1 tsp
Spices: Salt, Red Chili Powder, and Garam Masala (or Coriander powder)
Boondi: ~1/2 cup (Fried chickpea flour balls, crushed) — This absorbs excess moisture to keep the paratha crispy.
For the Dough:
Whole Wheat Flour (Atta): ~2-3 cups
Oil/Ghee: 1-2 tbsp for the dough mix
Seasoning: Salt and Nigella Seeds (Kalonji)
Liquid for Kneading: Milk mixed with a squeeze of Lemon Juice (to make buttermilk/curd)
Oil/Ghee: For frying the parathas
Step-by-Step Process
Step 1: Prepare the Cauliflower
Break & Wash: Break the cauliflower into large florets. Place them in a wooden bowl and pour boiling hot water over them to blanch and clean them.
Grate: Take the florets out of the water and grate them using a box grater.
Squeeze Dry: (Crucial Step) Take handfuls of the grated cauliflower and squeeze them tightly to remove as much excess water as possible. Place the dry, grated cauliflower into a clean mixing bowl.
Step 2: Prepare Aromatics & Binding Agent
Chop: Finely chop the fresh coriander leaves, peeled ginger, and fresh red chilies.
Crush Boondi: Pour the boondi (fried gram flour balls) into a mortar and crush them coarsely with a pestle. This will act as a binder and moisture absorber.
Step 3: Make the Filling
Combine: To the bowl of squeezed cauliflower, add the chopped coriander, ginger, and chilies.
Season: Add the Nigella seeds (Kalonji), salt, red chili powder, and the additional spice powder (likely Garam Masala).
Add Boondi: Add the crushed boondi to the mixture.
Mix: Mix everything thoroughly by hand until well combined.
Step 4: Make the Dough
Season Flour: In a large wide plate or tray (Parat), take the wheat flour. Add salt, Nigella seeds (Kalonji), and a spoonful of oil.
Prepare Liquid: In a separate small bowl containing milk, squeeze a wedge of lemon. This creates a buttermilk-like mixture which makes the parathas softer.
Knead: Pour the milk-lemon mixture into the flour and knead by hand. Add water if necessary to form a soft, pliable dough.
Step 5: Stuff & Roll
Portion: Break off a ball of dough and smooth it between your palms.
Stuff: Press the dough ball into a cup shape. Place a generous amount of the cauliflower filling inside.
Seal: Bring the edges of the dough together to seal the filling inside, pinching the top closed.
Roll: Flatten the ball between your palms, then place it on a wooden board. Roll it out gently with a rolling pin into a thick, round circle.
Step 6: Cook
Fry: Heat a tawa (pan). Place the rolled paratha on the hot pan.
Oil & Flip: Spread oil (or ghee) over the top surface. Flip the paratha and spread oil on the other side.
Crisp: Cook on both sides, pressing down gently with a spatula, until golden brown and crispy spots appear.
Serve: Serve hot, stacked up, paired with pickle or chutney.
